Use Server Settings preferences in Mail to change options for an account’s incoming and outgoing (SMTP) mail servers. To change these preferences in the Mail app on your Mac, choose Mail Preferences, click Accounts, then click Server Settings. This tutorial we will configure Apple Mail to use IMAP instead of the default POP. We will be using Mavericks the latest version of the Mac operating system although the settings will be the same for any Mail Client on Windows, Mac, Linux and any mobile client. Okay, so I looked into it more and apparently Mac mail is programmed to make poor assumptions upon detecting Hotmail/Outlook.com. I did this on Yosemite. I opened Mail and in the menubar, clicked MailAdd account. Picked 'other Mail account' (the last option) I put in a FAKE email address and fake password and clicked next. It contains instructions for an old version of the Mac OS X “Mail” program that is not included with new Mac computers. Unless you have a Mac running the older 10.10 “Yosemite” operating system, you probably want to read the current Apple Mail page instead.

You can change preferences for the SMTP mail server you use to send messages, as directed by the provider of your email accounts.
To change these preferences in the Mail app on your Mac, choose Mail > Preferences, click Accounts, click Server Settings, click the outgoing Account pop-up menu, then choose Edit SMTP Server List.
